Black Bean Soup
Serves: 6
Prep time: Overnight plus 20 minutes
Cook time: 4 hours
Ingredients:
1 lb. dried black beans
Dash of salt
Dash of baking soda
1 yellow onion, chopped
4-6 cloves garlic, chopped
1 bay leaf
1 cup cilantro, chopped
1/4 cup nutritional yeast
4 cups Vegetable Stock, plus additional water as needed to cover the beans
Seasonings to taste: cumin, chili powder, cayenne powder, Liquid Smoke, salt, pepper
Plant-based sour cream
Instructions:
1. Soak the beans in water overnight with salt and baking soda.
2. After soaking, rinse beans and add all ingredients to a crock pot.
3. Cover and cook on high for 4 hours. Taste and adjust seasonings as desired. Remove bay leaf. Blend a portion or partially blend with an immersion blender.
4. Serve with a dollop of plant-based sour cream .
