Seed Crackers

These crackers are made with a mixture of whole and ground seeds using brine from lacto-fermented vegetables as a natural binding agent. They can be dried in a dehydrator at 105 degrees to keep them raw, or set your oven to the lowest setting. 

Ingredients:

3/4 cup (4 1/2 oz) whole flax seeds

1/3 cup (1 1/2 oz) sunflower seeds

1/4 cup (1 1/2 oz) chia seeds

1/4 cup (1 1/4 oz) black sesame seeds

1/4 cup (1 1/4 oz) unhulled white sesame seeds

2 tbsp plus 1 1/2 tsp (1 oz) pumpkin seeds

1 tbsp (1/4 oz) poppy seeds

1 cup lacto-fermented pickle brine

1/4 cup (1 1/2 oz) chopped white onion 

2 medium garlic cloves

1/4 cup fresh cilantro leaves

1/4 cup fresh dill

1/4 cup flat leaf parsley leaves

1 tsp kosher salt

Directions:

In an electric grinder, pulse half of the flax seeds to a coarse powder.

Transfer the ground flax seeds to a large bowl and add the remaining flax seeds, sunflower seeds, chia seeds, black sesame seeds, white sesame seeds, pumpkin seeds, and poppy seeds. Stir the seeds well to combine and set aside.

In a small pot over low heat, warm the brine just until steaming. Transfer the warm brine to a blender and add the onion, garlic, cilantro, dill, parsley, and salt. Blend until the mixture is completely smooth. Pour the mixture into the bowl over the seeds, cover with plastic wrap, and set aside at room temperature for at least 1 hour or up to overnight. 

The flax and chia seeds will gel to form a gooey consistency. Set a dehydrator to between 105 and 125 degrees, or an oven to the lowest setting. Line the dehydrator racks or a baking sheet with silicone liners or wax paper, then use a spatula or back of a spoon to spread the seed mixture in a thin layer, about 1/4 inch thick. 

Transfer the seed mixture to the dehydrator or oven and let dry 8 hours, turning the whole piece over once and removing the liner or wax paper halfway through. When the crackers are brittle and crispy, break them into 2- to 3-inch shards. Serve or store in an airtight container for up to 7 days.
