Cilantro Salata
Serves: 2-4
Total Time: 15 min
Ingredients:
4 packed c. (6 1/2 oz.) cilantro leaves, coarsely chopped
2 poblano chiles (8 oz.), stemmed, seeded, and thinly sliced (2 c.)
2 c. red onion (8 oz.), quartered and thinly sliced
1 medium lime, peel and pith removed, flesh quartered and thinly sliced
Juice of 2 lemons (1/4 c.)
1/3 c. extra virgin olive oil
1 t. kosher salt
1/2 t. freshly ground black pepper
10 pitted kalamata olives
1 firm ripe avocado, thinly sliced
Directions:
1. In a large bowl, combine the cilantro, chiles, onion, and lime.
2. In a small bowl, whisk together lemon juice, oil, salt, and pepper.
3. Pour the dressing over the salad and toss gently to avoid bruising the cilantro leaves. Garnish with olives and avocado slices and serve immediately.
