Almond Flaxseed Banana Bread
Makes 1 loaf
Ingredients:
2 c. whole wheat pastry flour
1 t. baking powder
1/2 t. baking soda
1/4 t. salt
1/2 t. cinnamon
1/2 t. nutmeg
1/2 c. brown sugar (or 1/2 c. sugar plus 1 1/2 t. molasses)
1/4 c. plant-based butter (such as Earth Balance)
1/4 c. almond butter
2 c. overripe bananas, mashed (about 3 bananas)
1/2 t. almond extract
1/4 c. plant-based milk
1/3 c. roasted almonds, chopped, sliced, or slivered
1 T. flaxseeds
Vegetable oil for greasing
Directions:
1. Preheat oven to 350 degrees F. Grease loaf pan with vegetable oil and set aside.
2. In a large bowl, cream together brown sugar, margarine, and almond butter using a hand mixer or vigorously using a whisk or fork and add mashed bananas. Add almond extract and milk and stir to combine.
3. Sift in flour, baking powder, baking soda, salt, cinnamon, and nutmeg and stir just until combined.
4. Pour batter into prepared loaf pan and sprinkle almonds and flaxseeds on top. Bake 40-45 min, or until a tester inserted into the center comes out clean. Let cool before slicing.
