Apple Cinnamon Pancakes
Makes 10 pancakes
Ingredients:
1 3/4 c. whole wheat pastry or white whole wheat flour
1/4 c. sugar
1/4 t. salt
1 1/2 T. baking powder
1 T. cinnamon
1 1/2 c. plant-based milk
1 large apple, peeled and roughly chopped (about 1 1/2 c.)
Maple syrup and plant-based butter (such as Earth Balance) for serving
Directions:
1. In a large bowl, whisk together flour, sugar, salt, baking powder, and cinnamon.
2. Slowly add milk, whisking until batter is combined. Gently fold in chopped apples. Do not overmix.
3. Coat a large skillet or griddle with cooking spray or vegetable oil and heat over medium heat. Scoop 1/3 c. batter into pan and cook 3-4 min until edges start to brown and bubbles start to form. Flip and cook 2-3 min more.
4. Repeat with remaining batter. Serve warm with maple syrup and butter.
Variations: Substitute blueberries or chocolate chips for the apples.
