Mesquite Apple Nut Muffins
Makes 12 muffins
Ingredients:
1/2 c. mesquite flour
1/2 c. whole wheat flour
1/2 c. unbleached flour
2 t. baking powder
1/4 t. salt
6 T. sugar
1 t. cinnamon
1 t. ground ginger
1/2 t. ground cloves
1 c. chopped or grated apple
3 plant-based egg (such as Vegan Egg)
1 t. vanilla extract
3/4 c. plant-based milk
1/3 c. vegetable oil
1/4 c. chopped nuts
Barrel cactus seeds, desert chia seeds, or finely chopped nuts (optional)
Directions:
1. Preheat oven to 350 degrees F. Lightly grease muffin tin. In a large bowl, sift and combine flours, baking powder, salt, sugar, and spices. Stir in apple.
2. In a separate bowl, beat together eggs, vanilla, milk, and oil. Add wet ingredients to dry ingredients and mix just until incorporated. Gently fold in nuts. Do not overmix.
3. Pour batter into muffin tin. Sprinkle chia seeds, barrel cactus seeds, or finely chopped nuts on top of muffins. Bake 20 minutes until a tester comes out clean.
