Mesquite Chocolate Chip Cookies

Ingredients:

2 T. plant-based butter (such as Earth Balance)

1/4 c. brown sugar (or 1/4 c. white sugar plus 1 t. molasses)

1 plant-based egg equivalent (such as Vegan Egg)

1/4 c. cooked sweet potato, peeled and mashed

1 T. plain plant-based yogurt

1/2 t. vanilla

1/2 t. baking soda

1/4 t. salt

1/2 t. xanthan gum

2/3 c. rolled oats

1/3 c. mesquite flour

1/4 c. chocolate chips

Directions:

1. Preheat oven to 375 degrees F. In a large bowl, cream butter and sugar until blended. Add egg and mix until blended. Add sweet potato, yogurt, and vanilla and blend. 

2. Add baking soda, xanthan gum, and mesquite flour and mix until ingredients are well blended.

3. Fold in oats and chocolate chips and mix until incorporated. Let sit for 30 minutes. 

4. Spoon dough onto a clay baking stone or cookie sheet. Bake 12-15 minutes or until lightly browned.
