Mesquite Macaroons with Mesquite Flour Dust

Makes 18-20 macaroons

Ingredients:

1 c. shredded unsweetened coconut

1 c. mesquite flour

1/4 c. maple syrup

3 T. coconut oil

1 t. vanilla or almond extract

1/2 t. sea salt

Optional: Cacao powder, mesquite flour, and/or cinnamon

Directions:

1. In a large bowl, combine all ingredients. Mix with hands until a crumbly dough forms. Squeeze small amounts of dough in your palms and roll into balls of desired size. If desired, roll balls or dust in more mesquite flour, cacoa powder, and/or cinnamon. Refrigerate in an airtight container.
