Old-Fashioned Biscuits

Makes 6 large biscuits

Ingredients:

3/4 c. plant-based milk

1 t. lemon juice

1 c. whole wheat pastry or white whole wheat flour

1 c. all-purpose flour

1 T. baking powder

1 t. salt

1 t. sugar

1/4 c. plant-based butter (such as Earth Balance)

Directions:

1. Preheat oven to 400 degrees F. Grease a cookie sheet with cooking spray or vegetable oil and set aside. 

2. Combine milk and lemon juice and set aside for approximately 5 min.

3. Sift dry ingredients into a large bowl. Cut in the butter until the texture is wet and crumbly. Pour in milk and stir until just combined. Do not overmix.

4. Turn dough out onto a floured board and lightly roll into an approximate 9x11-inch rectangle. Add flour as needed to keep dough from sticking.

5. Fold the dough in half. Using a glass or cookie cutter, cut dough into 6 rounds and transfer to the prepared cookie sheet. 

6. Bake for 10-12 min.
