Prickly Pear and Ginger Lassi
Makes about 20 oz.
Ingredients:
1-2 oz. prickly pear juice
1 T. (or to taste) lemon juice, sour orange juice, or kombucha
1 pt. plain plant-based yogurt
Salt, to taste
Ginger, freshly grated, to taste
2 T. agave nectar, or to taste
10-12 ice cubes
Directions:
1. Blend all ingredients together in a blender or by hand. Garnish with a drizzle of more yogurt and/or more freshly grated ginger if desired.
