Tepache

What is tepache? (from Wikipedia)

Equipment:

Fermentation kit with water lock (I made my own using a container from some protein powder, a hose adapter and tubing from the hardware store. I drilled a hole in the lid from the protein container and hot glued in the adapter. This is then connected to the tubing, which is submerged in water, held in another container with holes poked in the lid to let gas escape.)

Half gallon container


Ingredients:

1 c. sugar (piloncillo or brown sugar or 1 c. white sugar plus 1 T. molasses)

1 or 2 pineapples, cores and peels 

6 c. water

1 cinnamon stick

2 cloves


Directions:

1. Wash and peel pineapple. Discard top and bottom.



2. Quarter and core. Reserve fruit for eating.



3. Pack peels and cores into half gallon and add spices.



4. Dissolve sugar in 6 c. warm water. Pour over pineapple and secure top with fermentation kit. 




5. Allow to ferment 12-48 hours at room temperature.

6. Remove fermentation kit and filter through cheesecloth.

7. Apply standard lid and ferment at room temperature another 6-12 hours.

8. Store in refrigerator until ready to serve.
