Ultimate Oatmeal
Serves 4
Ingredients:
Oats:
2 c. old-fashioned oats
1 c. water
1 c. plant-based milk
Pinch of salt
Sweetener (such as brown sugar, stevia, agave, maple syrup, etc.), if desired
Optional Toppings:
1 sliced banana
2 T. cocoa powder
2 T. peanut butter, almond butter, cashew butter, or sunflower butter
1/2 c. frozen or fresh berries
1/2 c. fresh or frozen pineapple, mango, apple, or peach chunks
1 t. vanilla extract
Roasted almonds, walnuts, pecans, pistachios, or peanuts
Ground flaxseed, toasted coconut, pepitas, sunflower seeds, or plant-based protein powder
Directions:
1. Combine oats, water, milk, and salt in a large pot and bring to a boil. Reduce heat and add in any flavorings (if desired to have fruit cooked through, for example). Continue to simmer oats for 5 min, stirring frequently until they are thick and creamy.
2. Serve into bowls and top with any combination of toppings desired.
