Apricots in Spiced White Wine Syrup

 Ingredients:

1 c. dry white wine

1/4 c. agave syrup

1 T. lemon zest

1/2 t. fennel seeds

Pinch ground cinnamon

Pinch ground cloves

Pinch ground black pepper

1 c. dried apricots

Directions:

1. Combine the wine, agave syrup, lemon zest, fennel seeds, cinnamon, cloves, and pepper in a mixing bowl and mix well. 

2. Add the apricots and soak for at least 15 minutes before serving. Serve in a bowl or glass with a scoop of plant-based ice cream topped with apricots and drizzled with the wine syrup. If not serving immediately, refrigerate for up to a couple of days.
