Wilted Quelites (Amaranth Greens)
Ingredients:
1 bunch amaranth greens
1 T. olive oil
1-2 cloves garlic
Salt to taste
Directions:
1. In a sauté pan over medium heat, sauté garlic in olive oil. Season with a pinch of salt, to taste, and add greens. Cover for a minute to let the greens wilt down, then toss until leaves and stems are tender.
Variation:
Use peanut or corn oil in place of olive oil and add finely sliced or shredded fresh ginger and 1-2 dry red chilies (or sprinkle with red chili flakes).
