Ginger, Garlic, and Green Chile Paste
Prep time: 10 minutes
Active: 5 minutes
Makes: 1/2 cup
Ingredients:
1/4 cup chopped ginger
1/2 cup garlic cloves, peeled
1/4 cup coarsely chopped green chiles (such as serrano)
Pinch of salt
Directions:
1. Combine all ingredients in a blender with 1 tablespoon of water. Store refrigerated in an airtight container for up to a week.
Notes:
1. Instead of blending, ingredients can be minced for a chunkier texture.
2. Paste can be added to sauces as needed. Add the paste to sauces just before adding other wet ingredients.
3. For added heat, equal amount of the ginger, garlic, and chiles can be blended or minced together. Cayenne pepper can also be added for more chile heat.
