Grapefruit Marmalade
Ingredients:
2 grapefruit
1 c. sugar
Directions:
1. Cut grapefruits into quarters and remove flesh from peels. Cut peels into medium dice. Place peels in a saucepan with enough water to cover and bring to a boil. Drain and repeat once more.
2. Meanwhile, separate grapefruit flesh from membranes. Reserve all juice and combine with flesh. There should be about 1 cup of flesh and juice. If needed, add water (or orange juice) to make 1 cup.
3. Bring liquid and sugar to a boil. Add grapefruit peels and any spices (see Note) and reduce heat to low. Cook for about 45 minutes, until liquid is syrupy and thick. Remove from heat and cool. If desired, puree in a food processor or blender. Store in a glass container in the refrigerator for up to a month.
Note:
Fresh ginger and other spices can be added to give the marmalade an extra kick.
