Jackfruit White Chili
Jackfruit:
2 cans green jackfruit
1 onion
5 cloves garlic
1 tsp cumin
1 tsp oregano
1 tsp smoked paprika
1/2 tsp salt
1 can roasted green chili's
1 jalapeno, deseeded
1 chipotle pepper (from can of chipotle peppers in adobo sauce)
1/4 cup vegetable oil
Juice of 1 lime
Salt and pepper
Combine
chopped jackfruit and all ingredients. If you have extra time, you can
let it marinade for a bit. Then, bake on a sheet at 425 for 50 min.
Stir the jackfruit up after half the time has passed.
Chili:
1 lb dried northern beans - cook separately
1 can tomatillo salsa
1 tsp cumin
1 tsp oregano
Ground black pepper
3 cloves garlic
1 chipotle pepper
1 onion
2 potatoes
4 cups veggie broth
4 cups water
Roasted jackfruit
Juice of one lime
Saute
onion, garlic, spices, and potatoes. Add rest of ingredients except
lime juice. Cook on low for 30 minutes. Add lime juice. Enjoy!
